Pour the water into the cornstarch mixture and stir together over medium heat until it starts to boil. Continue stirring for about one minute; once the mixture become thick and clear in color. Remove it from the heat and set aside to let it cool.&lt;br /&gt;&lt;br /&gt;Mix together the diced apple, banana, pineapple together with the chopped pecans in a medium size mixing bowl. Cut in 4 tbls of butter and the shortening until mixture resembles coarse meal with a few pea-sized pieces remaining. Sprinkle in 3 to 4 tbls ice water, a tbl at a time, until dough just comes together. Gather into a disk. Wrap and chill at least 30 minutes. Combine remaining cup of flour, 1/3 cup brown sugar, 1/4 tsp of salt, and 1/4 tsp of nutmeg. Cut in remaining 6 tbls of butter until crumbly. Stir in almonds. Chill. On a lightly floured work surface, roll out chilled pie pastry to fit a 9" pie pan. Fit pastry into pan. Trim and flute edges. Chill. Heat oven to 475. Grate 1 tsp of lemon zest from the lemon and squeeze 1 tbl of juice. Peel peaches and slice. Combine with remaining 2/3 cup brown sugar, remaining 1/2 tsp of nutmeg, lemon zest and juice, cornstarch and almond extract. Sprinkle bread crumbs over bottom of pie shell and fill with peach mixture. Sprinkle almond crumb mixture on top. Bake 15 minutes. Reduce temperature to 350. Fill a large saucepan with water and bring to a boil. Pour sweetened condensed milk into a small baking dish. Cover with aluminum foil. Set dish in a larger baking pan. Place pan on oven rack and pour boiling water into larger pan, to at least 1 inch deep. Carefully slide rack back into oven. Slice the apples into uniform slice and arrange them on the uncooked pie crust. Then pour the cooked mixture over apples slices and cover the top with the remaining pie crust. Bake at 350 degrees for 45 minutes. Apples can be sprinkled with one package of Sweet and Low, if desired.&lt;br /&gt;&lt;br /&gt;Note: This pie can be made without crust to save calories. It is a innovative method to make delicious apple pies and a great way to recycle.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTS FOR THE PIE CRUST&lt;br /&gt;1 1/2 cups All-Purpose Flour&lt;br /&gt;1/2 tsp Salt&lt;br /&gt;1/2 cup Shortening&lt;br /&gt;5 tbls Ice Water&lt;br /&gt;8 cups Apples [peeled &amp;amp; sliced]&lt;br /&gt;1/4 cup Granulated Sugar&lt;br /&gt;2 tbls All-Purpose Flour&lt;br /&gt;1/2 tsp Nutmeg, Ground&lt;br /&gt;2 tbls Lemon Juice&lt;br /&gt;1 tsp Cinnamon, Ground&lt;br /&gt;&lt;br /&gt;INGREDIENTS FOR THE FILLING&lt;br /&gt;1/2 cup Granulated Sugar&lt;br /&gt;1/2 cup All-Purpose Flour&lt;br /&gt;1/3 cup Butter&lt;br /&gt;1 large Paper Bag&lt;br /&gt;Vanilla Ice Cream&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;PIE BAKING INSTRUCTIONS&lt;br /&gt;Preheat the oven to 400 degrees.&lt;br /&gt;&lt;br /&gt;Making the Pie:&lt;br /&gt;1) Combine the first measure of flour, salt and shortening using a pastry blender until the mixture resembles coarse crumbs, then stir in the water a little at a time, using a fork, and form the dough into a ball.&lt;br /&gt;&lt;br /&gt;2) Roll out the pastry dough on a lightly floured board. Mix cracker cumbs and 1 cup&lt;br /&gt;pecans.&lt;br /&gt;&lt;br /&gt;Fold into meringue mixture a little at a time. Spoon mixture into an 8" pie plate tp form a shell. Pull up mixture into peaks around edge of plate with mack of spoon. Spread evenly. Bake in a&lt;br /&gt;moderate oven, 350 F, for 30 minutes. Cool thoroughly on a wire cake rack.&lt;br /&gt;&lt;br /&gt;Mix cream, 2 tablespoons sugar, 1 teaspoon vanilla and almond flavoring. Whip until thick and shiny. Spoon into cold pie shell. Sprinkle remaining 1/2 cup chopped pecans round edge of cream. The sweetness of the bananas really makes a great dessert in the summer.&lt;br /&gt;&lt;br /&gt;INGREDIENTS FOR PIE&lt;br /&gt;1 1/4 cups All-Purpose Flour&lt;br /&gt;2 tbls Granulated Sugar&lt;br /&gt;6 tbls Cold Unsalted Butter, diced&lt;br /&gt;1 Egg, beaten&lt;br /&gt;6 Ripe Bananas&lt;br /&gt;1/2 cup Warm Light Cream&lt;br /&gt;1/2 cup Granulated Sugar&lt;br /&gt;1 tbl Cornstarch&lt;br /&gt;1 tsp Vanilla&lt;br /&gt;4 Egg Whites, room temperature&lt;br /&gt;1 pinch of Salt&lt;br /&gt;1/3 cup Granulated Sugar&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;To Make Pastry&lt;/strong&gt;:&lt;br /&gt;Combine flour, sugar and butter in a food processor. Process until they reach the consistency of fine meal. Add beaten egg and continue to process just until dough starts to come together.&lt;br /&gt;&lt;br /&gt;Gather into a ball, wrap and refrigerate for one hour or place in freezer for 15 minutes to chill.&lt;br /&gt;&lt;br /&gt;Roll out dough on a floured surface or roll out between two sheets of plastic wrap to an 11-inch circle. Dough is sticky and falls apart easily; just patch together and fit into a nine-inch flan pan with removable bottom; trim edges. (If you don't have a flan pan, a pie plate can be used.) Chill for 30 minutes.&lt;br /&gt;&lt;br /&gt;Bake pastry at 375 degrees for 12 minutes until light golden in color. Thinly slice five of the bananas and arrange on bottom of pastry shell. Mash the remaining banana and combine with warm cream, 1/2 cup sugar, cornstarch and vanilla. Pour over banana layer. Bake at 350 degrees for 35 - 40 minutes or until filling is set. Let pie cool slightly.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;To Make Meringue&lt;/strong&gt;:&lt;br /&gt;Beat egg whites with a pinch of salt until soft peaks form. Gradually beat in 1/3 cup sugar until meringue is stiff and glossy. Preheat oven to 400 degrees F. Line a 9 inch pie plate with pastry. Drain bananas, saving 3 tablespoons of the juice. Place bananas in pie shell. Combine sugar, flour and cinnamon; sprinkle over bananas. Sprinkle with the 3 tablespoons of&lt;br /&gt;pineapple juice. Dot with butter, cover with top crust. Add butter. Add the lemon juice to the egg yolks and beat with a rotary egg beater until they are thick and velvety. Add this to the sugar, corn starch, butter and flour mixture and stir until free from lumps. You may need to add a few&lt;br /&gt;tablespoons of cold water to make thin enough not to lump. Pour the boiling water over lemon mixture. Set on the stove and let come to a boil, stirring constantly. And here is a secret; Your pie will have a better flavor if it scorches just a tiny bit. Add grated lemon rind.&lt;br /&gt;&lt;br /&gt;Let cool, stirring often. Pour into pie shell, and add meringue. Do not flatten the meringue, but let it stand in peaks. Spoon batter into prepared pans;bake 30 minutes until wooden pick inserted in center of each layer comes out clean.Remove layers to wire racks to cool completely.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;PREPARE EGG CUSTARD:&lt;br /&gt;In 2 qt. saucepan, stir 2/3 cup sugar,cornstarch and salt until thoroughly mixed; slowly stir in 2 1/2 cups milk until smooth.
